Thanksgiving, Birthdays, and Christmas Experiments…

So I’ve been on hiatus for the last few months and for a good reason… I’ve been finishing up my last semester of Grad school at Stevens Institute of Technology and I am proud to say I am finally DONE as of December!!! Since my last blog, I’ve experimented with coconut cupcakes topped with coconut buttercream, sweet potato cupcakes topped with cream cheese frosting, and broccoli and cheese meatloaf cupcakes… the last one, odd, yes I know. Joel yelled at me one night because I was baking and said he didn’t want to eat anymore cupcakes… he said, “grill me a steak!” haha… I’ve been neglecting making real food since I’ve been so consumed with baking. Sooo, I decided to make a compromise and make him meatloaf cupcakes. He looked at me and shook his head. I said, “WHAT? It’s meat!” and so the laughing begins.

The coconut cupcakes were for Gloria’s (Joel’s mom) birthday since she looooves coconut flavored things and chocolate so I promised to experiment. It came out great, and it made me think about my aunt’s macaroons… yummm! The sweet potato cupcakes I made were for Thanksgiving and were a hit. I didn’t expect it to be so fluffy because there was no milk but it’s one of the best cakes so far. I had to make it again for Christmas along with 5 other flavors. I was probably baking and decorating cupcakes for three days straight for Christmas.. but it was all worth it when I saw them disappear before we were allowed to eat dessert!

Past Projects

I was asked to make a Baptism Cake based on colors of a Precious Moment figurine. She gave me creative freedom and just asked I make a Red Velvet cake, filled with Cannoli Cream, and topped with Chocolate Buttercream. When she came to pick up her son’s cake, she was so pleased with the detailed decoration that she did not want to bother placing the figurine on the cake!

I was asked by a friend to make a cupcake cake for a 30th wedding anniversary for a surprise party. Her parents got hitched in Vegas so while at my desk we were deciding what theme to use. Someone pops in overhearing our conversation and said said why not a poker theme? So I went along with the idea and here is the outcome!

Cards: Red Velvet cupcake cake topped with Buttercream + Surrounding cupcakes: Red Velvet cake topped with Cream Cheese Frosting = Very Happy Customers!

South Park Tssst Birthday Cake

As my fiancé’s (Joel) birthday neared, he requested that I make his favorite cupcake, which is Gone Bananas (chocolate cake filled with banana mousse and topped with chocolate buttercream), into a cake and decorate it with a South Park theme. I remember watching a South Park episode with him which featured Cesar Milan, The Dog Whisperer. This episode made Joel watch the actual show and since then he has been using Cesar’s techniques on our first pup Sydney. He also decided he wanted to become a dog trainer and is now certified through Animal Behavior College (ABC).

So on that note, I figured that I make his cake based on this picture since he loves South Park and Cesar Milan!

As you can see… He loved his cake!
